MUGHLAI CHICKEN BIRYANI RECIPE
Ingredients:
* 500 grams chicken, cut into small pieces
*1/2 cup ghee or vegetable oil
*1 teaspoon cumin powder
*1 teaspoon coriander powder
*1 teaspoon garam masala powder
*1 teaspoon red chili powder
*1 teaspoon turmeric powder
*2-3 green cardamom pods
*2-3 black cardamom pods
*4-5 cloves
*1 bay leaf
*1 teaspoon saffron threads
Salt, to taste
*2 tablespoons chopped fresh coriander leaves
*2 tablespoons chopped fresh mint leaves
Instructions:
1. Soak the basmati rice in water for 30 minutes. Drain the water and set the rice aside.
2. In a large mixing bowl, combine the chicken pieces with yogurt, ginger paste, garlic paste, cumin powder, coriander powder, garam masala powder, red chili powder, turmeric powder, and salt. Mix well and marinate for at least 1 hour in the refrigerator.
3 .In a large pot, heat the ghee or oil over medium-high heat. Add the onions and fry until they are golden brown. Remove the onions from the pot and set them aside.
4 .In the same pot, add the marinated chicken and cook until it is browned on all sides. Remove the chicken from the pot and set it aside.
5 .In the same pot, add the green and black cardamom pods, cloves, cinnamon stick, and bay leaf. Stir for a few seconds until fragrant.
6. Add the soaked rice and stir well for 2-3 minutes until it is coated with the spices and ghee.
7 . Add enough water to the pot to cover the rice by about 1 inch. Add saffron threads and salt, to taste.
8. Bring the water to a boil, then reduce the heat to low, cover the pot and let it cook for 15-20 minutes until the rice is fully cooked.
9. Layer the cooked chicken and fried onions on top of the cooked rice. Cover the pot with a lid and let it cook on low heat for 10-15 minutes.
10. Garnish with chopped coriander and mint leaves before serving.
